Mondeuse Noire “Les Tallis” - Domaine St. Germain (Red, Natural)

Organic certified from ex environmental biologist Raphaël St. Germain. Low intervention, manual harvest. Places a huge emphasis on biodiversity in the vineyard. Also recycles CO2 produced during fermentation to reduce levels of SO2 in the winemaking process. This wine is made with a rare local red variety Mondeuse Noire  and has aromas of crunchy blackcurrants and both violets and parma violet sweets of your childhood. It has supple tannins and a wonderful finish.
